Steamed pork ribs
Ingredients
- 500 g pork ribs
- 1 tbsp rapeseed oil
- 30g corn starch
- White pepper
- 1 thinly sliced chilli
Brine
- 500 ml water
- 6g baking soda
- 6g salt
Marinade
- 1 tbsp oyster sauce
- 2 tsp soy sauce
- 4 g salt
- 10 g douchi (soaked in rice wine)
Directions
Wash cut ribs and leave in brine for at least 30 min. Remove from brine and shake off water and then pat dry. Massage marinade on ribs and let rest for at least 30 min. Steam for 15 minutes.
